Method:
1. Marinade the beef in the soy sauce, rice wine, cornflour and bicarbonate soda for 20 minutes. Ideally cook some rice now.

2. Mince the garlic, ginger and spring onion and set aside.

3. Mix sauce ingredients together well.

4. Heat up a wok with oil then fry in batches until golden, then add all back into the pan/wok. along with the broccoli.

5. Add the sauce gradually until desired sauciness. Keep everything moving around so well coated.

6. Serve with fresh rice, toasted sesame seeds and if you want extra chilli hit - @meimeigoods black bean crunch topper is a winner.

FLAVOUR SYSTEM :
BASE - Spicy Soy Stir Fry Sauce
TOPPER - Black bean crunch (optional)

Ingredients:
→ 400g beef (any just cut thin and against grain)
→ 2 tbsp @meimeigoods spicy soy sauce
→ 1 tosp Chinese rice wine
→ 1/4 tsp bicarbonate soda
→ 1/4 tsp cornflour
→ Broccoli - blanched in salted water/drained
→ 2 tsp ginger, minced
→ 2 tsp garlic, minced
→ 3 spring onion, finely chopped

Sauce:
→ 3 tbsp @meimeigoods spicy soy sauce
→ 2 tbsp oyster sauce
→ 1 tbsp Chinese rice wine (Shaoxing) or dry sherry/mirin
→ 250ml chicken stock
→ 1 tbsp cornflour + cold water (to make slurry)
